The key process involves natural crystallisation in the salt fields, which is protected by a valuable biosediment of minerals and microorganisms. The tiny pyramidal crystals form on the surface of brine only when there is no wind, as if they were disrupted by the slightest wave - harvested by hand in a thin layer of surface in the salt fields.
